Baked Goods, Muffins
2 cups all-purpose flour
(half whole wheat if desired)
3-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 cup chopped peeled apple
1 egg lightly beaten
1 cup milk
1/3 cup melted butter or shortening
TOPPING:
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
Sift together flour, baking powder, salt and sugar. Stir in chopped apple. Combine egg, milk and melted butter. Add to dry ingredients, stirring just until moistened; do not overmix. Spoon into greased or paper-lined muffin cups, filling 3/4 full.
Topping: Combine sugar, cinnamon and nutmeg; sprinkle over muffins. Bake in 400 F oven for 15 to 20 minutes or until golden. Makes 12 to 16 muffins.
